Hot off the press! Check out this research investigating the shelf-life of refrigerated sugar kelp following five post-harvest treatments including washing in fresh water/sea water, blanching for 2 minutes in fresh water/sea water, and untreated kelp. The study evaluates the effect of these treatments on changes in quality attributes (sensory, microbial, chemical and physical) during storage. The refrigerated (+ 2.8°C) shelf-lives for sugar kelp from all treatments were observed to be 7-9 days and the paper elaborates on differences observed in various treatment conditions. These findings are crucial for manufacturers who wish to establish best practices when working with sugar kelp, so feel free to share this research!
